I love walking into a house that smells like baked goods fresh from the oven. One of my all time favorite smells is freshly baked banana bread and right now I am reveling in that aroma because I have just pulled my project for the day out of the oven.
Here is my step by step guide to making banana bread.
- 1 Cup Margarine or Butter (room temperature)
- 4 Eggs
- 2 tsp. Baking Soda
- 1 1/2 Cups Sugar
- 1/2 Cup and 2 tbsp. Brown Sugar
- 1 tsp Salt
- 3 3/4 Cups Flour
- 6 super-ripe Bananas (mashed)
- 1 Cup Chopped Nuts (divided)
- 1 – 1 1/2 Cups Sour Cream or Plain Yogurt
- 2 tsp. Vanilla Extract
Preheat your oven to 300 degrees.
Add anywhere from 1-1 1/2 Cups of Sour Cream or, for a healthier option, plain yogurt. This will keep your bread from being too dry and will really depend on your climate and your personal taste as to how much you will add.*
Just for kicks I am adding a handful of chocolate chips today. I am living on the edge here people. You could also add raisins or dried cherries or anything you like here, if you feel like trying something new.
Finally, you want to put your pans into the preheated oven and bake for 45 minutes to 1 1/2 hours, depending on your climate. I suggest checking your bread with a toothpick at 45 minutes and using that to determine how long you have left to bake. I also turn the pans at 45 minutes if they need to bake longer to insure even baking. When your toothpick comes out of the center clean it is time to remove your bread from the oven. It should have a nice golden brown color to the top.
Allow your bread to cool in the pan for at least 20 minutes then remove from the pan and finish cooling on a wire rack.

*For this demonstration I am only making a half recipe. I used chopped pecans for my bread, 1/4 cup and 2 tbsp. sour cream and baked for 1 hour and 20 minutes total.
